Picking just one seems wrong, but I think I'm going to have go with the prosciutto from this coffee shop in Soho. Taleggio, arugula, really great bread, and strawberry-rhubarb jam, which sounds weird but is surprisingly awesome.
A good banh mi is tough to beat, though. Or the grilled cheese at Murray's, or Beecher's. And anything at Parisi, really. It's this Italian place in Nolita with sandwiches the size of small children.
